This week, we are sharing 2 recipes. The first recipe is for a Low-Carb Pizza and the second recipe is for ExtendShake Pudding Pops.
Low-Carb Pizza (makes 2 personal size pizzas):
Ingredients:
2 "Low-Carb" Tortillas
6 slices of Low-fat Mozzarella Cheese
6 slices of Turkey Bacon
1 whole tomato, sliced
7-8 oz. Roasted Red Peppers (1 jar)
Olive Oil Cooking Spray
Directions: Cook the 6 slices of bacon (microwave with paper towels is easy). Preheat oven to 400 F. Spray both sides of tortillas with olive oil cooking spray and place onto pizza/cookie sheet(s). Add to each pizza, 3 slices of cheese, 1/2 the tomato, 1/2 jar of roasted red peppers, 3 slices of bacon cut into small pieces. Add Oregano, Garlic, or other seasoning to taste. Cook in oven for 10-15 minutes or until cheese bubbles and is golden brown. For finishing touches, add crushed red peppers and/or Parmesan cheese to taste.
ExtendShake Pudding Pops:
Follow the directions on a small box of your favorite Sugar-Free Instant Pudding Mix. When mixing the pudding, add 1 ExtendShake powder packet (your favorite flavor, we used chocolate pudding with Chocolate ExtendShake).
Pour pudding mix into small dixie cups, insert a popsicle stick, and place into the freezer. Allow the pudding to freeze, then remove dixie cup and enjoy an ice-cold pudding pop for dessert!
